Keto-Approved Chocolate Chip Cookies

Health and diet experts are always coming up with new ways to customize recipes to fit certain needs. For people following the keto diet, it’s simple to swap out certain ingredients for approved alternatives. This even includes desserts. Here is a keto-friendly version of a classic chocolate chip recipe that everyone can enjoy.

Ingredients

2 eggs

1 tsp vanilla extract

3/4 cup coconut oil

1/4 cup coconut sweetener

1/2 cup ultrafine coconut flour

1/2 cup almond flour

1/2 sugar-free chocolate chips

1/2 tsp baking soda

Process

  1. First, set your oven to preheat at 350 degrees.
  2. While the oven is heating up, lightly beat the eggs with a whisk or a fork. Combine in a mixing bowl with coconut oil, coconut sugar and vanilla extract.
  3. Next, gradually add in the dry ingredients. Mix in the baking soda, coconut flour and almond flour until the dough forms. You can mix with a large mixing spoon or a handheld electric mixer if you prefer.
  4. Now, gently fold the chocolate chips into the dough.
  5. Prep a baking sheet with parchment paper. Then, using a large tablespoon, scoop out balls of dough. Arrange them evenly on the baking sheet.
  6. Use a spatula or another flat surface to flatten each cookie gently. This is optional, but they will cook more evenly when flatter rather than spherical.
  7. Bake the cookies for 12 to 15 minutes. You can also watch for them to brown.
  8. Remove the cookies from the oven, but keep them on the baking sheet to cool. Let them cool for approximately 10 minutes before moving them onto a wire rack.
  9. Once they’re on the wire cooling rack, they can cool completely without the risk of falling apart.
  10. Now you have a batch of delicious and keto-friendly chocolate chip cookies. You can share them with friends, colleagues and family while knowing this sweet treat adheres to your dietary needs.

Tips


If you want softer cookies, you can tweak the amount of almond flour in the recipe. It’s also important to make sure you use extremely fine grain coconut flour, as the cookies can turn out dry if you use flour that is too gritty. Try substituting other types of chips for fun variations such as sugar-free butterscotch or white chocolate.
